Orange Slice Bars
This is a recipe my mom used to make every year for the holiday season as part of her amazingly plentiful Christmas baking

Orange Slice Bars
(from my mother via my sister)

1 lb. candy orange slices (those standard gum-drop-type thingies)
2 c. sifted flour
1/2 t. salt (you can leave this out. My sister does; I don't.)
1 lb. (3 c.) light-brown sugar
4 eggs, slightly beaten
1 c. chopped nuts (we always used walnuts)
1 t. vanilla
  • Cut the orange slices into small pieces with scissors dipped in cold water (You may need to dip the scissors fairly frequently to keep them from getting too sticky).
  • Add the cut-up orange slices to the flour and salt.
  • Add the remaining ingredients and mix well.
  • Spread in 2 greased 9x9x2 inch pans.
  • Bake in moderate oven of 350 degrees F. for about 45 min.
  • Cool in pans.
  • Cut in 1 x 3 inch bars (and roll in fine granulated sugar if desired; to be honest, I don't like them this way and I skip the "roll in sugar" part).
My aunt cooked hers for only about 35 - 40 minutes, and that works fine, too.

I'm thinking that these would be excellent with dates, say, in place of the candied orange slices. (For those of who aren't candied orange slice fans.)
